What I'm doing in lockdown - John Young

John Young's Easy, Fast and Simple Fish Chowder 

Ingredients 

  • 2 medium carrots - finely chopped
  • 1 onion - finely chopped 
  • 2 celery sticks- finely chopped 
  • 4 medium size potatoes, roughly chopped 
  • Half teaspoon of chopped tarragon 
  • 500g (hard) white fish (ling, whiting etc) cut into 2cm chunks
  • Or mixed with lobster chunks 
  • 1 can sweet corn kernels 
  • 300ml thickened cream 
  • 1 lt Massel Organic Chicken stock or fresh chicken stock 
  • Dash of dry white wine 
  • Baguette 

 

Instructions

  1. Boil chicken stock (10 mins) with chopped carrots, onion, celery and half the potatoes (set aside other half and boil in water until soft).
  2. Set aside to cool - once cooled, process with stick or food processor until creamy. 
  3. Reheat processed stock until just boiling, add chunks of fish and lobster, corn kernels, remaining boiled potatoes, tarragon - boil for a further minute, turn off flame. Add cream and a dash of white wine. 

 

I find this is enough for a hearty lunch or light dinner for 3. Any more simply double the ingredients or stretch what you have with more chicken stock to start off.
